Trumpet Mushroom "Bacon" & Eggs

Ingredients

(2) 8 oz boxes of trumpet mushrooms
3 tbsp canola or vegetable oil
1 tsp salt
¼ tsp black pepper 
1 tbsp maple syrup 
1/8 teaspoon paprika

Directions

Step 01 - Preheat your oven to 350°F and adjust oven rack to center position.

Step 02 - Trim the firm ends of the mushroom. Slice them lengthwise into 1/8th-inch slices.

Step 03 - Line a rimmed baking sheet with aluminum foil, and oil the surface with 2 tablespoons oil.

Step 04 - Lay sliced mushrooms in a single layer and season each side with salt and pepper.

Step 05 - Transfer to the oven and cook for 20 minutes. Carefully flip the mushroom slices over and return to the oven for another 20 minutes until well-browned and crisp. (Mushrooms will quickly overcook, so monitor them carefully.)

Step 06 - Remove from the oven and use a pastry brush to glaze mushrooms with maple syrup. Return to the oven and cook for another 5-10 minutes, until sugars start to caramelize.

Step 07 - Allow to cool completely before transferring to an air-tight container and storing at room temperature for up to 5 days.
