Easy Miso Soup

Serving Size: Makes 1 big bowl of soup 
Time: 5 minutes

Ingredients

3 cups Master Mushroom Stock
1 cup baby spinach
1/4 cup firm tofu, diced into small cubes
1 tablespoon white miso paste
A handful of dried mushrooms (maybe even from the Master Mushroom Stock!)

Directions

Step 1 - Bring the mushroom broth just up to a simmer over medium heat, about 3 minutes. If adding dried mushrooms, you will need to simmer for 10-15 minutes or until they are tender (or simply add the rehydrated ones!).

Step 2 - Spoon one tablespoon of white miso paste into the bottom of a large soup bowl. Ladle a little hot broth on top and whisk the paste into the broth to dissolve. Add the raw greens and tofu on top. Pour the mushroom broth on top and stir the greens slightly to wilt, about 1 minute. Eat immediately.
